Here is for today the light strawberry tiramisu recipe. I finally found a mascarpone a little lighter than the classic mascarpone. It is in the bio department that I discovered the mascarpone Bio Village. If you find other lighter mascarpones leave me a comment so I try to find it!
I love the tiramisu shot I wanted to test a lighter version. But a tiramisu without mascarpone is not a real tiramisu …
If you are a SW fan, a verrine is worth 4 syns.
Ingredients for 6 verrines:
80 g mascarpone (organic village)
100 g white cheese 0%
6 spoon cookies
300 g strawberries
20 ml lemon juice
20 g sugar
Wash the strawberries and cut into pieces. Mix one-third of the strawberries with the lemon juice to make a coulis and reserve the other pieces.
Using a whisk, mix the egg yolks with the sugar until they whiten. Add mascarpone and cottage cheese. Stir again with a whisk until the mixture is well blended.
Beat the whites with a pinch of salt in firm snow and incorporate into the mixture.
Dip the biscuits in the strawberry coulis and arrange them at the bottom of each verrine.
Cover with half of the mousse, then pieces of strawberries, then foam again and finish with strawberries.
Guests who are not WW are entitled to a speculoos crumbled above their tiramisu 😉
