1/3 cup almond flour
1 heaping tbsp cream cheese
1 tbsp butter (cold)
1/2 tsp xantham gum
Lemon Filling :
A little less than 1/4 cup lemon juice
1 tsp lemon zest
1/4 cup sweetener (a bit more if you like it sweeter)
1 large egg
1 tbsp butter
Tart : take a mixing bowl and add the almond flour, xantham gum,cream cheese and give it a
good mix with a spatula. Now add the cold butter and carry on mixing so that it becomes a smooth
dough. Take a muffin pan or silicone Moulds and press the mixture down into it and pull up onto
the sides ensuring that it’s even all over. Now put into the microwave for 3 to 3.30 mins depending
on the wattage of your microwave. Put it into the fridge to cool.
Take a bowl and add the lemon juice , lemon zest and sweetener. Now put this bowl over a
double boiler (put a pan over the fire underneath the bowl and add water in it and keep it on
medium heat) and add the eggs into it and start stirring immediately . After 3-4 minutes you will
see the mixture has thickened and will be a bit lumpy. Take it off the fire and let it cool a bit. Now
add the butter and give it a last stir. Lastly take a sieve and put the mixture through it. Put it into the
fridge to cool.
Now all that’s left is to put it together by taking each tart and adding the filling. Put the tarts into the
fridge for best results.
