Keto Spaghetti Squash Pan

Ingredients

1 3lb. spaghetti squash

2 tablespoons olive oil

4 cloves minced garlic

½ tablespoon Thai curry

1lb. minced pork

0.5lb. Ground beef

1 cup marinara sauce, no added sugar

½ cup grated Parmesan cheese

1 1/4 cup ricotta cheese

1 large egg

1 teaspoon dried basil

Salt and pepper to taste

4 slices of mozzarella cheese

Instructions

Preheat the oven to 400 ° F and cover a baking sheet with parchment paper.

Cut the squash in half and remove the seeds.

Brush the squash with 1 tablespoon of olive oil and season to taste with salt.

Transfer the squash to a baking sheet. Roast the squash 30-35 minutes or until tender.

Pull the squash’s yarns with a fork and transfer them to a bowl. Set aside.

Heat the rest of the olive oil in a skillet. Add garlic and curry and cook until fragrant.

Add ground pork and beef. Season meat to taste and cook until golden.

Pour the marinara sauce half and half and mix gently. Simmer the mixture for 15 minutes.

Meanwhile, combine grated parmesan, ricotta, egg and basil in a bowl. Season according to the desire. Grease the baking dish with oil. Place the squash in the bottom of the dish. Garnish with cheese and meat mixture.

Finally, garnish the meat with mozzarella slices.

Reduce the oven temperature to 375F. Cover the pan with foil and bake for 25 minutes. Discover and bake for 20 minutes or until golden.
